  1. Preheat your oven to 400, grease up muffin pan with coconut oil. Fit 1 to 2 slices of ham into each muffin cup, use one egg for each cup scrambled or whole. If you prefer scrambled whisk each egg separately. Feel free to put whatever else you want with the eggs, bacon, sausage chunks, scallions or green onions. Feel free to top withe cheese of choice. Put muffin pan into oven bake for 10-15 minutes.
Recipe Notes

Sidenote: Don't put too much egg into each cup because it will overflow onto the bottom of your oven. I made that mistake LOL. Also it is also makes a huge mess in the muffin tin, make sure your muffin pan is well greased. I wonder if cupcake baking cups will work better?
