My daughter makes me this when ever I need a little extra fiber.
Low Carb Flax Muffin in a Cup
Mix all the ingredients in a microwaveable mug. Microwave for one minute on high. Smooth on butter or any other topping.
I love this muffin so much. I don't personally use the stevia or any type of fake sugar. Try adding a tsp of peanut butter on top, coconut flakes on top and or in the mix itself. So good. Let muffin cool and enjoy.
You could also add frozen berries but maybe cook it a little longer.
Just make sure to count the macros and calories for each individual ingredient to get the correct numbers.
