Low Carb Keto Chocolate chip cookie

I was having a super stressful day and needed a little comfort food. Chocolate chip cookies always helped in the past. Since I am close to my goal weight I thought why not. Did a quick search on the internet for a low carb / keto friendly cookie and found one. My wonderful daughter offered to make them for me. She did a very good job. The funny thing – I found them to be very good, my daughters on the other hand found them to be gross. lol To me that is a win.. they won’t be eating my cookies. lol

Low Carb Keto Chocolate chip cookie
Instructions
  1. Preheat oven to 350. Line 1 large baking sheet with parchment paper.
  2. In a bowl, sift together dry ingredients almond flour, coconut flour, baking soda and salt.
  3. In a second bowl, add wet ingredients: butter, sweetener, egg and vanilla. Beat with a blender until smooth.
  4. Add flour mixture to the wet ingredients and mix. Stir in Chocolate chips.
  5. Drop 1-2 tablespoon size mounds of dough on baking sheet spacing evenly. If you prefer flat cookies use your palm or bottom of cup to flatten cookies to desired size and thickness.
  6. Bake for 10-12 minutes, or until slightly golden around edges. Cool on baking sheet for 2-3 minutes then transfer to wire rack.
Recipe Notes

Maker sure to put the ingredients in your macro app to find out what your macros are for each cookie. Not all almond flour or coconut flour has the same calorie and carb count.

My daughter found this recipe on the-lowcarb-diet.com and tweaked it a bit. She will be making another batch soon with a different spin. So stay tuned. :0)
